Now I don’t mean to brag, but I can make a mean dessert.
There is just something so comforting about getting into the kitchen, bringing out my baking supplies and creating something magical. I love when people get excited to try my baking and making people smile when they take a bite. Baking is one of the things I do whenever I am feeling anxious or overwhelmed and it never fails to make me feel better.
While I love experimenting with new recipes and making something different there are a few recipes that I love to make over and over (including the two that Nigel said he married me for).
Disclaimer: Most of these recipes are not healthy (actually I don’t think any of them are), but I am a strong advocate of treating your self every once and while and that life isn’t really life without a little bit of dessert.
- Salted Caramel Bars
averiecooks.com Now this is one of those recipes that Nigel married me for, and whenever I need to bring a dessert anywhere this is what he (very loudly) suggests. I also love this recipe for a multitude of reasons including how easy it is but also I have yet to meet anyone who doesn’t like these.
- Cookies and Cream Cookies
insidebrucrewlife.com I first made these for Nigel for his birthday many moons ago and since then it has been his favourite cookie. I love how it mixes the things you love about cookies and cream with the wonderfulness of cookies and they are so soft and gooey.
- Salted Toffee Cookies
goodmorningcali.com There is not much more I love than Skor bits and these cookies are chock full of them, alongside the delicious chocolate chips and fresh salt crushed on top. Note: The blog that I originally found this recipe on doesn’t seem to work anymore so I found this other blog that copied it and the formatting isn’t the best.
- Mini Pavlova’s
mennonitegirlscancook.com This is such a wonderful spring and summer dessert especially topped with fresh berries. I love the crack that they make when you bring your fork through them and how they then melt in your mouth. I also love that these Pavlova’s are individual which makes it a lot easier to serve.
